Bring out the Soup!


We have been getting a lot of rain lately which makes the days cooler, not cold, just cooler than in the high 90's. Cool, rainy days make good soup days. I have been wanting to make potato soup all week but just didn't have the time until today. Since we can't just pop open a can of Campbells soup we have to make it from scratch. I love this recipe I got from a missionary friend years ago so I'll share it with you too. You can try it next time you have a cool, rainy day and need some good home cooked soup. It is also fun to share your soup with friends. Hannah had her friends Dorcas, Deborah, and Mapalo over for lunch.(pic. above)
Potato Soup
-About 12 potatoes-cook, drain, and mash
-add 2 cups of milk (I usually have to add much more-you can make it the consistency that you like.)
-add about 2 cups grated cheddar cheese
-add 1/2 cup chopped onion
-add a couple of Tblsp. butter
-add 1 Tblsp. salt
-add 1/8 tsp pepper
-add 1/4 cup bacon bits or ham(I usually do both and more than this amt. on ham)
-add 1 Tbsp. garlic powder
-add 1/2 cup ranch dressing
-Add 1/2 cup grated carrot

Keep stirring. Add more milk if necessary.
This is really good served with a little grated cheese on top and some home made bread.

Hilarious, I am sitting here eating potato soup as I read this! Great minds think alike! I have been waiting for cooler weather for soup too!!! :o)
